Method
- Combine 1 cup coarsely ground coffee beans with 4 cups filtered cold water in a mason jar or cold brew maker
- Stir gently to saturate the grounds
- Cover and steep at room temperature for 12 to 24 hours
- Strain the mixture through a fine mesh strainer or cheesecloth into a large container
- Place soaked pistachios in a blender along with heavy cream, milk, powdered sugar, non-alcoholic vanilla extract, and sea salt
- Blend until smooth, scraping down sides as needed
- Pour cold brew coffee over ice in a glass
- Top with 1 oz non-alcoholic vanilla syrup and a generous spoonful of pistachio cream
- Garnish with additional chopped pistachios if desired
Notes
Cold brew can be stored in the refrigerator for up to 1 week
Soaking pistachios for 30 minutes softens them for a smoother texture
