- Make the Vanilla Syrup: In a small saucepan, combine granulated sugar, water, and alcohol-free vanilla extract. Simmer over medium heat for 5 minutes, stirring until sugar dissolves. Cool completely. Brew Coffee: Prepare strong coffee or espresso. Assemble the Latte: Add 2 tablespoons of vanilla syrup and half the ice cubes to a glass. Pour in brewed coffee, then top with remaining ice and milk of choice. Stir well.
